This product was developed by Enchante, a western kaiseki restaurant in Itami City, at the request of the city to promote Itami, the birthplace of refined sake. The yokan (Japanese red bean jelly) is made with sake lees from the local sake brewery Itami Oimatsu Brewing, and Japanese white azuki beans Shiromaru, with no preservatives or other additives. It is characterized by the light aroma of sake lees and just the right amount of sweetness, and can be enjoyed by people of all ages.
Onitsura is the name of Ueshima Onitsura, a haiku poet from Itami who was admired alongside Matsuo Basho during the Edo Period (1603-1868). Onitsura was born into a family of sake brewers in Itami, hence this yokan was named “Sakagura Yokan Onitsura,” where “sakagura” is Japanese for “sake brewery.”
